Quick and easy Mustard Greens cooked in chicken thigh broth.

We are going to be cooking mustard greens in chicken thigh broth.
The chicken thigh broth is a little bit milder than broth made with beef or pork. (all 3 will work)
This is a healthy quick and easy way to cook greens. And it's simple to make. This is a no salt recipe.
The chicken broth gives it a good flavor to where no salt is needed.
Greens are a great source of nutrition, and it helps balance your plate portions.
Green and leafy vegetables also help your digestive system.
The chicken thighs can be baked, barbecued or used in secondary dishes for the next day.
If you're cooking multiple dishes at once. as suggested in the mirror program.
I usually cook the greens for the next day. And cook a quick, simple dish for that night with the chicken.
And add the Greens to tomorrow's menu with another meat.
This is one of the suggestions that the mirror program gives you on how to cook multiple meals at once.
Other meats can be used to replace the chicken thighs. Depending on what you like and can't eat.
Or a vegetarian version with no meat. And making your own vegetable broth.

Ingredients

  • One bunch of mustard greens.

  • 2 Chicken thighs.

  • Two slices of onions or 1chopped shallots.

  • Ground pepper.

  • Onion powder.

  • Garlic.

  • Optional spices of your choice. (It is about what you like.)

  • Suggestion: Cumin, Celery (fresh or dry) or paprika.)

Preparation

Step 1


Cook chicken thighs for around 1 hour.

Add pepper, onion powder to taste. (no salt)

Reduce the heat and cook for 1 hour. Checking every 20 minutes.



Step 2


Remove the chicken from the broth.

Add onions, shallot or both. This an option point. Add what you like.

Garlic is a healthy tasty option.



Step 3


Wash and soak mustard greens. Trim the stems. Break up and add to the boiling chicken broth.

You have an option to add a little more water to cover the greens. Cook to a boil and reduce heat.

Simmer for a 1 hour. Check and stir every 20 minutes until tender.

Season with spices that you know you like.

Or just onion powder, pepper and garlic. (try fresh or fresh in a jar)

Suggestion: cumin, dry celery or paprika used to taste.

No need for salt. The chicken broth gives the pot a very nice flavor.



Step 4


You have the option of adding the chicken thighs back to the greens. (Make sure they are done.)

You can make a secondary dish with the chicken.

You can make baked barbecue chicken to go with your greens.

Use them in a stir fry. Eat with noodles or potatoes.

Or a favorite dish of your choice. You have a lot of easy options.
